Time saver tip: You can easily use an equal amount of frozen peppers and onions stir fry mix if you don’t have fresh on hand and don’t feel like doing the extra chopping. This recipe is pretty forgiving, so the amounts of peppers and onions don’t need to be exact!

I love roasted cauliflower anyway, but the flavor combination in the marinade for this recipe is AMAZINGLY DELICIOUS! Time saver tip: I use bagged shredded cabbage like you would for coleslaw and jarred mango salsa which makes this recipe even easier!

Sheet Pan Gnocchi & Vegetables


Gnocchi is almost sinfully good anyway! When you roast it with the veggies and spices…OMG! Too marvelous!

Vegan Enchiladas with Tofu & Black Beans


Yep, these enchiladas work even without any cheese! Time saver tip: Here again you can sub in frozen peppers and onions for the bell pepper and onion. Just use approximately the same amount and you’ll be golden!
